Which records should I keep?

The short answer is everything.

I have seen every reasonable accounting record imaginable asked for in an audit at one point or another. I could elaborate, but suffice it to say that the one ridiculous scrap of paper you consider useless is exactly the one that they will want to see. If you don't have it, you will probably pay. Keep everything.
